Thanksgiving Menu: Vegetarian + Vegan Dishes

Thanksgiving is synonymous with turkey, but these days many people are cutting back on their meat consumption or eliminating it all together, either for health or personal reasons.  This Thanksgiving, our family will be preparing a traditional turkey along with Pacific Northwest salmon, but we will also have many guests who are on a vegetarian, vegan, plant-based or gluten free diet.  Instead of just serving them a collection of side dishes, why not whip up some vegetarian or vegan main dishes that are hearty and satisfying, even for meat lovers!  We could all use more veggies in our diet, right?  (And for veggie-phobic eaters like my husband, if you present these dishes in a beautiful way and just don’t advertise the fact that they’re *vegan*, they might not even notice!  Ahem.) Here are some delicious options for celebrating the big day with healthy, nutritious foods.

    You know, the turkey is my least favorite part of the Thanksgiving meal. Some years I don’t even eat any. My favorite part is the dressing. We do dressing down here in Alabama versus stuffing, and I love my maternal family’s dressing the best. It starts out with egg bread instead of cornbread and it is served with kind of an oatmeal consistency versus a loaf-like consistency of a lot of dressings. Give me that, some cranberry sauce, some dumplin’s, and I’m a happy (yet full and then miserable) camper.

    Thanks for posting these great vegetarian and vegan options. I am an omnivore, but I did a short stint as a vegetarian while in college. I’m glad I did, though, because I have a great love for vegetables now. I get excited about the squashes, the spiced nuts, and herbs like sage that are prevalent in the fall. I can take or leave the turkey.

    Me too, Heather! That’s too funny! Your family’s dressing recipe sounds yummy…is it more like a bread pudding then? My mom’s stuffing is my favorite too. In fact, my aunt is hosting this year, but I still begged my mom to make her stuffing and bring it just for me!

    I didn’t really notice until you mentioned it, but in all my Thanksgiving Menu posts, I didn’t list a single recipe for turkey! Guess I’m a “sides” gal at heart. There will, however, be lots of turkey mentioned in my Thanksgiving Leftovers post next week. Plain turkey breast? Nah, I’ll pass…but turn it into turkey pot pie or an awesome panini with cranberry sauce on pumpkin yeast bread and I’m all over it!
